White Chicken Lasagna Soup

Ingredients
  

  • 1 lb chicken breasts
  • 1 tbsp butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp flour
  • 6 cups chicken broth
  • 8 oz lasagna noodles, broken
  • 1 cup half and half or heavy cream
  • 2 cups baby spinach
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese

Instructions
 

  • Sauté onion and garlic in butter. Add flour and cook for 1 minute.
  • Add broth and chicken breasts. Simmer until chicken is cooked.
  • Remove chicken to shred. Add noodles to pot and cook until soft.
  • Return chicken to pot along with cream and spinach.
  • Stir in cheeses until melted and serve.

Notes

Serve with a dollop of ricotta cheese on top for extra creaminess.
