Ingredients
  

  • 1 lb ground beef (80/20 lean)
  • 4 medium flour tortillas (soft taco size)
  • 4 slices American or Cheddar cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp pickle relish

Instructions
 

  • Mix mayonnaise, ketchup, mustard, and relish in a small bowl to make the sauce. Set aside.
  • Divide ground beef into 4 equal portions and roll them loosely into balls. Preheat a large skillet or griddle over medium-high heat.
  • Place a beef ball onto the hot skillet. Place a tortilla on top of the meat. Use a heavy spatula to smash the tortilla down, flattening the beef underneath to the edges.
  • Season with salt, pepper, and garlic powder. Cook for 2-3 minutes until the beef has a dark brown crust.
  • Flip the tortilla and beef over. Immediately place a slice of cheese on the meat and drizzle with sauce.
  • Fold the tortilla in half. Cook for another 1-2 minutes until the tortilla is golden brown and crispy and the cheese is melted.

Notes

Use a cast-iron skillet for the best crust. Prep all toppings before starting to cook as the process moves quickly.
