Ingredients
  

  • 4 count chicken thighs, bone-in skin-on
  • 1 lb Yukon gold potatoes, chopped
  • 3 large carrots, chopped
  • 2 medium parsnips, peeled and chopped
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 400°F. Line a large baking sheet with parchment paper.
  • Whisk olive oil, garlic, rosemary, salt, and pepper in a small bowl.
  • Toss vegetables with half the oil mixture on the pan. Arrange chicken skin-side up.
  • Brush remaining oil over chicken. Roast 35-40 minutes until chicken reaches 165°F.
  • Rest for 5 minutes before serving.

Notes

Pat the chicken skin completely dry before seasoning to ensure it gets crispy in the oven.
