Ingredients
  

  • 1 lb boneless skinless chicken breasts, cubed
  • 8 oz wide egg noodles
  • 4 tbsp butter, divided
  • 3 cloves garlic, minced
  • 2.5 cups chicken broth
  • 1/4 cup parmesan cheese, grated
  • 1 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Pat chicken dry and season with salt and pepper. Heat 1 tbsp butter in a large deep skillet over medium-high heat.
  • Add chicken to the pan and cook for 4-5 minutes until browned. Remove chicken from the pan and set aside.
  • Add remaining butter and minced garlic to the skillet. Sauté for 30 seconds. Pour in chicken broth and scrape up browned bits.
  • Bring broth to a boil, then add egg noodles. Reduce heat to low, cover, and simmer for 5-6 minutes.
  • Add the chicken and its juices back into the pan. Stir well. Cook uncovered for 2-3 minutes until noodles are tender and sauce thickens.
  • Remove from heat. Stir in parmesan cheese and garnish with fresh parsley.

Notes

If the sauce gets too thick upon standing, stir in a tablespoon of warm water or broth before serving.
