Ingredients
  

  • 1 lb chicken breast, diced
  • 8 oz dried wide egg noodles
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1 cup frozen peas
  • 2 carrots, diced
  • 1 onion, diced
  • 1 tsp dried thyme

Instructions
 

  • Heat oil in a large pot. Brown seasoned chicken pieces, then remove.
  • Add onions and carrots to the pot; sauté until soft.
  • Pour in chicken broth and thyme. scrape bottom of pan. Bring to boil.
  • Add noodles and return chicken to pot. Simmer covered for 10-12 mins.
  • Stir in cream and peas. Heat for 2 mins and serve.

Notes

Stir frequently to prevent noodles from sticking. Add cream at the very end to prevent curdling.
