Ingredients
  

  • 1.5 lbs chicken breast or thighs, cubed
  • 2 tbsp olive oil
  • 1 medium zucchini, chopped
  • 1 large bell pepper (red or yellow), chopped
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tbsp fresh lemon juice

Instructions
 

  • Cut chicken into bite-sized pieces and season with salt, pepper, and half the oregano.
  • Heat 1 tbsp oil in a large skillet over medium-high heat. Cook chicken for 4-5 minutes until browned. Remove and set aside.
  • Add remaining oil to the pan. Sauté zucchini and peppers for 3-4 minutes. Add garlic and remaining oregano.
  • Return chicken to the pan. Stir in olives and feta cheese. Cook for 1 minute until feta softens.
  • Remove from heat, squeeze lemon juice over the top, and serve immediately.
