Ingredients
  

  • 15 oz whole milk ricotta cheese
  • 1 tbsp extra virgin olive oil (plus more for garnish)
  • 1 tsp fresh lemon zest
  • 1 tbsp heavy cream (optional)
  • 2 tbsp honey or hot honey
  • 1 tbsp fresh thyme or basil, chopped
  • 1/2 tsp flaky sea salt
  • 1 loaf crusty bread or crackers for serving

Instructions
 

  • Place the ricotta in a fine-mesh sieve over a bowl for 15 minutes to drain excess liquid.
  • Combine drained ricotta, 1 tbsp olive oil, lemon zest, cream, salt, and pepper in a food processor.
  • Whip on high speed for 2-3 minutes until completely smooth and airy.
  • Transfer to a shallow serving bowl. Use a spoon to create swirls in the surface.
  • Drizzle generously with honey and more olive oil. Top with fresh herbs and flaky salt. Serve with bread.
