- 30 oz frozen diced hash browns (thawed)
- 1 lb breakfast sausage
- 6 slices bacon, cooked and crumbled
- 1 small yellow onion, diced
- 1 cup bell pepper, diced
- 2 cups Colby Jack cheese, shredded
- 10 large eggs
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp hot sauce (optional)
Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.
In a skillet, cook sausage, onion, and bell pepper until meat is browned and veggies are soft. Drain fat.
Spread diced hash browns in the baking dish. Top with the sausage mixture, crumbled bacon, and shredded cheese.
Whisk together eggs, milk, salt, pepper, and hot sauce. Pour evenly over the casserole.
