Ingredients
  

  • 30 oz frozen diced hash browns (thawed)
  • 1 lb breakfast sausage
  • 6 slices bacon, cooked and crumbled
  • 1 small yellow onion, diced
  • 1 cup bell pepper, diced
  • 2 cups Colby Jack cheese, shredded
  • 10 large eggs
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp hot sauce (optional)

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.
  • In a skillet, cook sausage, onion, and bell pepper until meat is browned and veggies are soft. Drain fat.
  • Spread diced hash browns in the baking dish. Top with the sausage mixture, crumbled bacon, and shredded cheese.
  • Whisk together eggs, milk, salt, pepper, and hot sauce. Pour evenly over the casserole.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for another 15-20 minutes until center is set.
