Ingredients

  • 8 cups chicken stock
  • 2 cups wide egg noodles
  • 1 medium onion, diced
  • 2 large carrots, sliced
  • 2 stalks celery, sliced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp butter

Instructions
 

  • Melt butter in a large pot. Sauté onion, carrots, and celery until soft.
  • Add chicken stock, thyme, and bay leaf. Bring to a boil, then simmer for 20 mins.
  • Add egg noodles and cook until tender (about 7-10 mins).
