- 2 cups shredded cooked chicken
- 8 cups chicken stock
- 2 cups wide egg noodles
- 1 medium onion, diced
- 2 large carrots, sliced
- 2 stalks celery, sliced
- 1 tbsp fresh parsley, chopped
- 1 tbsp butter
Melt butter in a large pot. Sauté onion, carrots, and celery until soft.
Add chicken stock, thyme, and bay leaf. Bring to a boil, then simmer for 20 mins.
