- 14 oz smoked sausage (kielbasa or andouille), sliced
- 1.5 lbs baby red or Yukon gold potatoes, cubed
- 3 tablespoons olive oil
- 1 packet (1 oz) Ranch seasoning mix
- 1 cup cheddar cheese, shredded
- 2 tablespoons fresh chives, chopped (optional)
Preheat oven to 400°F (200°C). Line a baking sheet with parchment or foil.
Toss potatoes, sausage, olive oil, and ranch seasoning in a bowl until coated.
Spread in a single layer on the baking sheet. Bake for 30-35 mins, flipping halfway.
Once potatoes are tender, sprinkle cheese over the top. Bake 2-3 mins until melted.
