- 1 can coconut milk (full fat)
- 1 large onion, diced
- 1 large red bell pepper, diced
- 1 can diced tomatoes (14oz)
- 3 cloves garlic, minced
- 1 tbsp lime juice
- 1 tsp turmeric
- 1 tsp cumin
Season chicken with spices.
Brown chicken. Remove.
Sauté veggies.
Add liquids and chicken. Simmer 20 mins.
Add lime juice and cilantro.
