- 1 lb Andouille sausage, sliced
- 2 lbs Yukon Gold potatoes, cubed
- 1 onion onion, diced
- 1 pepper green bell pepper, diced
- 2 stalks celery, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tbsp Cajun seasoning
- 3 tbsp flour
Brown sausage. Remove.
Sauté veggies in fat. Add flour.
Whisk in broth and spices. Add potatoes.
Cook 20 mins. Mash slightly.
Add cream and sausage. Heat through.
Serve hot.
