- 6 slices bacon, chopped
- 4 cups Russet potatoes, cubed
- 1 onion onion, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup sour cream
- 1.5 cups cheddar cheese
Cook bacon. Use fat to sauté onion.
Add flour, then broth and cream. Add potatoes.
Cook 20 mins. Mash slightly.
Stir in sour cream and cheese.
