Ingredients
  

  • 1.5 lbs chicken breast, cubed
  • 2 tbsp olive oil
  • 2 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives
  • 1/2 cup artichoke hearts
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp lemon juice

Instructions
 

  • Season chicken and brown in skillet. Remove.
  • Sauté zucchini and onion until soft.
  • Add tomatoes, olives, and artichokes.
  • Return chicken to pan. Add lemon juice.
  • Top with feta and herbs.
