Ingredients
  

  • 2 sticks unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1.75 cups bread flour
  • 1.75 cups all-purpose flour
  • 1.25 tsp baking soda
  • 1.5 tsp baking powder
  • 1 tsp sea salt
  • 0.5 tsp espresso powder
  • 2.5 cups dark chocolate discs (60% cacao)

Instructions
 

  • Sift dry ingredients together.
  • Cream butter and sugars until light (5 mins). Add eggs and vanilla.
  • Mix in dry ingredients lightly. Fold in chocolate discs.
  • Cover dough and refrigerate for 24-36 hours.
  • Preheat oven to 350°F (175°C). Scoop dough onto lined sheets.
  • Bake 12-14 minutes until golden. Sprinkle with salt.
