- 2 sticks unsalted butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 1 tbsp vanilla extract
- 1.75 cups bread flour
- 1.75 cups all-purpose flour
- 1.25 tsp baking soda
- 1.5 tsp baking powder
- 1 tsp sea salt
- 0.5 tsp espresso powder
- 2.5 cups dark chocolate discs (60% cacao)
Sift dry ingredients together.
Cream butter and sugars until light (5 mins). Add eggs and vanilla.
Mix in dry ingredients lightly. Fold in chocolate discs.
Cover dough and refrigerate for 24-36 hours.
Preheat oven to 350°F (175°C). Scoop dough onto lined sheets.
Bake 12-14 minutes until golden. Sprinkle with salt.
