Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 3 tbsp olive oil
  • 1 lemon juiced
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 cup Greek yogurt
  • 1 cup cucumber, grated and drained
  • 1 tbsp fresh dill, chopped
  • 4 pieces pita bread
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, sliced

Instructions
 

  • In a bowl, mix olive oil, half the lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for 30 minutes.
  • Combine Greek yogurt, drained grated cucumber, dill, and remaining lemon juice in a small bowl. Refrigerate until serving.
  • Heat a skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden and internal temp reaches 165°F. Rest for 5 minutes, then slice.
  • Warm pita bread in the skillet. Assemble gyros with chicken, tzatziki, tomatoes, and onions.
