- 1.5 lbs chicken breast, boneless skinless
- 2 cups corn kernels (frozen or fresh)
- 1 can (14oz) cream-style corn
- 3 medium Russet potatoes, peeled and cubed
- 1 small onion, diced
- 3 cups chicken broth
- 1 cup half-and-half (or heavy cream)
- 6 slices bacon, cooked and crumbled
- 1 tsp dried thyme
Place chicken, potatoes, corn (both types), onion, broth, and thyme in slow cooker.
Cook on LOW for 6-7 hours.
Remove chicken, shred, and return to pot.
Stir in half-and-half. Heat through for 15 mins.
Serve topped with bacon and chives.
