Ingredients
  

  • 1.5 lbs chicken breast, boneless skinless
  • 2 cups corn kernels (frozen or fresh)
  • 1 can (14oz) cream-style corn
  • 3 medium Russet potatoes, peeled and cubed
  • 1 small onion, diced
  • 3 cups chicken broth
  • 1 cup half-and-half (or heavy cream)
  • 6 slices bacon, cooked and crumbled
  • 1 tsp dried thyme

Instructions
 

  • Place chicken, potatoes, corn (both types), onion, broth, and thyme in slow cooker.
  • Cook on LOW for 6-7 hours.
  • Remove chicken, shred, and return to pot.
  • Stir in half-and-half. Heat through for 15 mins.
  • Serve topped with bacon and chives.
