  • 1 tsp cinnamon
  • 0.5 tsp baking soda
  • 0.5 cup butter, melted
  • 0.5 cup brown sugar
  • 1 large egg
  • 1 cup carrots, finely grated
  • 0.5 cup walnuts, chopped
  • 0.25 cup raisins

Instructions
 

  • Preheat oven to 350°F. Whisk butter and sugar.
  • Add egg and vanilla. Stir in flour, oats, soda, and spices.
  • Fold in carrots, nuts, and raisins.
  • Scoop onto baking sheet. Flatten slightly.
  • Bake 11-13 mins. Cool and glaze (optional).
