  • 1 1/2 lbs boneless, skinless chicken breast or thighs, cut into 1 1/2-inch pieces
  • 2 medium onions, chopped
  • 3 cloves of garlic, minced
  • 1 large red bell pepper, chopped
  • 2 medium carrots, peeled and chopped
  • 1 can of diced tomatoes (14.5 oz)
  • 1 cup of chicken broth

Instructions

In a large pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat.
