Ingredients

  • 12 oz (340g) pasta of your choice
  • 1 block (340g) feta cheese
  • 3 large tomatoes, halved
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp (30g) olive oil
  • Salt and pepper to taste

Instructions

Preheat oven to 425°F (220°C). Cook pasta according to package instructions.

In a large baking sheet, toss sliced red onion and minced garlic with a drizzle of olive oil, and season with salt and pepper to taste. Roast in the oven for 15-20 minutes, or until caramelized.

Mix cooked pasta with roasted vegetables and crumbled feta cheese. Season to taste with salt and pepper.
