Ingredients

1 (3-4 lb) beef chuck roast

2 cups beef broth

1 tablespoon tomato paste

2 tablespoons olive oil

1 onion, peeled and sliced

3 cloves garlic, minced

1 cup red wine

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper, to taste

2 tablespoons all-purpose flour

Directions

Season the roast with salt and pepper. Heat the olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 2-3 minutes per side. Remove the roast from the pot and set it aside.

Add the sliced onion to the pot and cook until it’s softened and lightly browned, about 5 minutes. Add the minced garlic and cook for an additional minute.

Add the beef broth, red wine, thyme, rosemary, and bay leaf to the pot. Stir to combine, then return the roast to the pot.
