Ingredients
12 ounces medium shells or rotini pasta1 head broccoli, cut into very small florets1 tablespoon olive oil3 cloves garlic, minced5.2 ounces Boursin cheese (Garlic & Fine Herbs)1/2 cup reserved pasta water1/4 cup grated Parmesan cheeseSalt and black pepper to taste
Instructions
1. Bring a large pot of salted water to a boil. Add the pasta and cook accordingto package directions.2. While pasta cooks, heat olive oil in a large skillet over medium-low heat. Add garlic and cook for 1 minute until fragrant.3. Add the entire wheel of Boursin cheese to the skillet. Use a spoon to break it apart. Add 1/4 cup of the pasta water (or broth) and whisk until the cheese melts into a smooth sauce. Keep warm on low.4. Two minutes before the pasta is done, add the small broccoli florets to the boiling pasta water.5. Just before draining, reserve 1 cup of the starchy pasta water. Drain the pasta and broccoli.6. Add the pasta and broccoli to the skillet with the cream sauce. Add the Parmesan cheese and another 1/4 cup of reserved pasta water.7. Toss vigorously over medium-low heat for 1-2 minutes until the sauce thickens and coats everything. If it’s too thick, add more pasta water.8. Season with salt and pepper. Serve immediately.
Notes
If you can’t find Boursin, use 4 ounces of plain, softened cream cheese mixed with 1/2 tsp garlic powder and 1/2 tsp dried oregano.Cutting the broccoli very small is key to this 20-minute hack. It must be small enough to cook in just 2 minutes.The starchy pasta water is essential for creating a glossy, smooth sauce. Do not substitute with plain water.
