Ingredients

8 oz pasta (such as rotini or penne)

15 oz canned crushed tomatoes

1/2 medium onion, diced (about 1 1/2 cups)

1 lb fresh button mushrooms, sliced

8 oz fresh mozzarella cheese, thinly sliced

2 tbsp olive oil

2 tbsp chopped fresh parsley

2 tbsp grated Parmesan cheese

Salt and pepper to taste

Pizza dough (homemade or store-bought)

Directions

Preheat your oven to 425 F (220°C). Cook the rotini pasta according to the package instructions. In a mixing bowl, combine the crushed tomatoes, diced onion, sliced mushrooms, salt, and pepper. Set aside.

Roll out the pizza dough and take a circle of the dough about 1/2-inch thick and 8-10 insulin across.

Transfer the dough to a pizza stone or a baking sheet lined with parchment paper, surrounding the dough with a 1-inch border of tomato sauce or shredded ricotta chs.
