Description
One-Pan Creamy Chicken and Rice is a comforting dish made with juicy chicken thighs, aromatic vegetables, creamy rice, and parmesan cheese.

- 1/4 cup olive oil
- 4 Tbsp unsalted butter, divided
- 1 medium onion, finely diced
- 2 large carrots, grated or cut into matchsticks
- 1 1/2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tsp salt, divided
- 1/4 tsp black pepper
- 2 bay leaves (optional)
- 1 cup dry white wine (Chardonnay recommended)
- 5 cups hot low sodium chicken broth
- 2 cups jasmine rice, unrinsed
- 1 head garlic
- 1/3 cup fresh parsley, chopped
- 1/2 cup shredded parmesan cheese, plus more for serving
Instructions
- Heat olive oil and 2 Tbsp butter in a pot. Add onion, carrots, and 1 tsp salt. Cook until golden.
- Add chicken, bay leaves, 1 tsp salt, and pepper. Cook until browned.
- Increase heat and add white wine. Reduce until mostly evaporated.
- Stir in hot broth and rice. Place whole garlic head (cut side down) into center. Cover and simmer 15 minutes.
- Remove garlic head. Stir in remaining butter, parsley, and parmesan until creamy.
- Serve hot with extra parsley and parmesan.
Notes
For brown rice, extend cooking to 45 minutes. Instant brown rice cooks in the same time as jasmine.
