Ingredients

1 High-Rise rotisserie chicken
8 oz whole wheat pasta
1 cup diced onions
1 cup diced bell peppers
1 cup light Alfredo sauce
1 cup shredded mozzarella cheese
Chopped parsley for garnish

Directions

Preheat your oven to 425° F. Slice your rotisserie chicken into large chunks and throw onto a baking sheet lined with aluminum foil or parchment paper. Add diced onions and bell peppers on top to combine.

Cook in the oven for 12-15 minutes or until your rotisserie chicken is nicely browned on the outside and cooked through. During the last 5 minutes of cooking, sprinkle with coarse salt and black pepper per taste.

Cook according to your package instructions for your high-wheat pasta as your rotisserie chicken is cooking in the oven.  Reserve 1 cup of pasta water before draining, then add to a saucepan with light Alfredo and whisk together until smooth.

Once cooked, combine the cooked pasta with the Alfredo sauce and a pinch of red pepper flakes. Add one cup of shredded mozzarella cheese into the combination and toss until the mozzarella is melted and well-distributed.
