Key Ingredients

Korean chili flakes, also known as gochugaru, are a staple in Korean cuisine and add a deep, smoky heat to the dish. Look for high-quality, finely ground flakes for the best flavor. Gochujang, a fermented soybean paste, is another essential ingredient in Korean cooking and adds a thick, sticky texture and a sweet, savory flavor. Choose a high-quality, Korean-made gochujang for the best results.

Yield:
4 Servings

Ingredients

1 lb ground beef

2 tbsp Korean chili flakes

2 tbsp soy sauce

2 tbsp brown sugar

2 tbsp rice vinegar

2 tbsp gochujang

1/4 cup chopped green onions

1/4 cup toasted sesame seeds

1 bunch bok choy

Cilantro, chopped (optional)

Directions

1
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it is no longer pink, about 5 minutes.

2
Add the Korean chili flakes, soy sauce, brown sugar, and rice vinegar to the skillet and stir to combine. Bring the mixture to a simmer and cook for 2-3 minutes, until the sauce has thickened slightly.

3
Stir in the gochujang and cook for an additional 1-2 minutes, until the sauce has thickened to your liking.

4
Serve the beef mixture over steamed bok choy and garnish with chopped green onions and toasted sesame seeds. If desired, sprinkle with chopped cilantro.

5
Serve immediately and enjoy!

Storage & Reheating

To store leftovers, let the bowls cool completely and then refrigerate or freeze. Reheat in the microwave or oven until hot and steaming. For best results, reheat in a single layer to prevent the sauce from breaking.
