Ingredients

  • 2 tablespoons of extra-virgin olive oil
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 2 large carrots, peeled and chopped
  • 2 large potatoes, peeled and chopped
  • 1 large cabbage, cored and chopped
  • 4 cups of chicken broth
  • 1 teaspoon of dried thyme

Instructions

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic, chopped carrots, potatoes, and cabbage to the pot. Cook for an additional 5 minutes.
