Description

Elote-Inspired Chicken Casserole combines the creamy comfort of a casserole with the smoky, tangy flavors of Mexican street corn.


Ingredients

Scale
  • 1 1/2 lbs cooked shredded chicken
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 4 oz cream cheese, softened
  • 3 cups corn (frozen, canned, or roasted)
  • 2 cups shredded cheddar or Mexican blend cheese, divided
  • 1/2 cup cotija cheese (or feta)
  • 1 can diced green chiles
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp lime juice

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix mayonnaise, sour cream, and cream cheese until smooth.
  3. Add chicken, corn, half the cheddar, cotija, green chiles, cilantro, and spices. Stir to combine.
  4. Spread mixture into a greased baking dish.
  5. Top with remaining cheddar cheese.
  6. Bake for 25–30 minutes, until bubbly and golden brown.
  7. Let rest for 5 minutes before serving.
  8. Garnish with cilantro and lime juice.

Notes

Grill the corn before adding for extra flavor. Swap chicken with ground turkey or beef for variety. Store leftovers in the fridge for up to 3 days.
