Ingredients
2 1/2 cups all-purpose flour
2 cups granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
4 large eggs, room temperature
1 cup buttermilk, room temperature
2 teaspoons vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. Add the softened butter and mix with an electric mixer on low speed until the mixture resembles coarse crumbs.
4. In a separate medium bowl, whisk together the eggs, buttermilk, and vanilla extract.
5. Pour the wet ingredients into the dry ingredients. Mix on low speed, then increase to medium and beat for 2 minutes until light and fluffy.
6. Divide the batter evenly between the prepared cake pans.
7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
8. Let the cakes cool in the pans for 15 minutes before inverting them onto a wire rack to cool completely.
