Creamy High Protein Beef Pasta combines lean beef, penne pasta, and a Greek yogurt-Parmesan sauce for a hearty, protein-packed dinner.
Ingredients
8 oz penne pasta
1 lb lean ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes with juices
1 cup low-sodium beef broth
½ cup plain Greek yogurt
¼ cup grated Parmesan cheese
1 tbsp Italian seasoning
Salt and pepper to taste
Olive oil for cooking
Fresh basil or parsley for garnish
Instructions
1. Cook penne pasta in salted water until al dente. Drain and set aside.
2. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant.
3. Add lean ground beef and cook until browned.
4. Stir in diced tomatoes, beef broth, Greek yogurt, Parmesan, Italian seasoning, salt, and pepper.
5. Simmer for a few minutes to meld flavors.
6. Add cooked pasta to the skillet and toss until coated.
7. Serve hot, garnished with basil or parsley.
Notes
Add spinach or bell peppers for more nutrition.
Use whole wheat pasta for extra fiber.
Store leftovers up to 4 days in the fridge.
Reheat gently with a splash of broth.
