Ingredients

2 cups creamy peanut butter

1/2 cup granulated sugar

1/4 cup simple syrup

1/4 cup coconut oil

2 tablespoons vanilla extract

1 cup salted roasted peanuts, chopped

Optional: 1 cup chopped peanut butter cups

1 cup sugar-free chocolate chips

Directions

In a large mixing bowl, combine peanut butter and sugar. Beat on high speed until light and fluffy.

Beat in the simple syrup and coconut oil until well combined. You may need to stop the mixer a few times to scrape down the sides of the bowl.

Beat in the vanilla extract. Make sure to mix well to avoid streaks.

Fold in the chopped peanuts and, if using, peanut butter cups.

Pour the mixture into a lined or greased 8-inch square baking dish. Refrigerate for at least 2 hours or until firm. Cut into 16 bars, store in an airtight container at room temperature.

Storage & Reheating
