Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup brown rice
  • 1 cup frozen peas and carrots
  • Sliced scallions, for garnish

Instructions

Preheat oven to 400°F (200°C). Season the chicken breast with Cajun seasoning.
