Yield:

Ingredients

1 pound steak (such as ribeye or strip loin), sliced into thin strips

1 package cheese-filled tortellini

3 cloves garlic, minced

1 cup beef broth

1 tablespoon olive oil

Salt and pepper, to taste

Fresh parsley, chopped (optional)

Fresh thyme, chopped (optional)

Directions

1
Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

2
In a large skillet, heat the olive oil over medium-high heat. Add the steak and cook for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer the steak to a plate and let rest.

3
Reduce heat to medium and add the garlic to the skillet. Cook for 1-2 minutes, or until fragrant.

4
Add the beef broth to the skillet and bring to a simmer. Scrape up any browned bits from the bottom of the pan.

5
Add the cooked tortellini to the skillet, tossing to combine with the garlic and broth. If the sauce seems too thick, add a bit of the reserved pasta water.

Storage & Reheating

To store leftovers, let the tortellini cool completely before transferring to an airtight container. Refrigerate for up to 3 days or freeze for up to 2 months. To reheat, simply sauté the tortellini in a bit of olive oil until warmed through.
