Ingredients

  • 1 pound boneless, skinless chicken breast
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup all-purpose flour
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Pasta of your choice (recommended: penne or linguine)

Instructions

Bring a large pot of salted water to a boil and cook pasta according to package instructions.

In a large skillet, heat olive oil over medium-high heat and add diced onion and minced garlic. Cook until onion is translucent.

Remove onion and garlic from the skillet and set aside. In the same skillet, add chicken breast and cook until browned and cooked through.

Remove chicken from the skillet and set aside with onion mixture. In the same skillet, add flour and whisk together to make roux, cooking for 1-2 minutes.

Gradually add heavy cream to the skillet, whisking continuously until combined. Bring the mixture to a simmer and cook for 2-3 minutes, or until slightly thickened.

Stir in Parmesan cheese until melted and combined. Add cooked chicken, onion mixture, and broccoli to the skillet. Cook until heated through.
