Ingredients

4-5 large potatoes, peeled and chopped

2 tablespoons butter

1 onion, chopped

2 cloves garlic, minced

1 cup heavy cream

1 teaspoon dried thyme

Salt and pepper, to taste

Directions

1
Melt the butter in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

2
Add the chopped potatoes, thyme, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the potatoes start to soften.

3
Add the heavy cream and bring the mixture to a simmer. Reduce the heat to low and cook for 10-15 minutes, stirring occasionally, until the soup has reached the desired consistency.

4
Remove the pot from the heat and use an immersion blender to puree some of the potatoes with the creamy broth, or transfer the soup to a blender and blend until smooth. Return the soup to the pot and season with additional salt and pepper if needed.

5
Serve the soup hot, garnished with chopped chives or a sprinkle of paprika, if desired.

Storage & Reheating

To store leftovers, let the soup cool completely and then refrigerate or freeze. When reheating, stir in some additional cream or milk if the soup has thickened too much. For an extra creamy kick, try blending in some fresh herbs or grated cheese.
