Ingredients

1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces

2 tablespoons unsalted butter

1 large onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1 cup heavy cream

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (optional)
