Why This Recipe Works

  • The key to achieving a perfect crust on the steak lies in the Maillard reaction, a chemical reaction between amino acids and reducing sugars that occurs when food is cooked, resulting in a rich, caramelized flavor.
  • This recipe’s one-skillet approach makes it incredibly efficient, minimizing cleanup and cooking time.
  • The combination of garlic butter, parsley, and lemon juice creates a bright, citrusy flavor profile that complements the richness of the steak and potatoes.

Key Ingredients

When selecting ingredients for this recipe, be sure to choose high-quality options to ensure the best flavor. For the steak, opt for a tender cut like ribeye or strip loin. For the potatoes, look for high-starch varieties like Russet or Idaho. For more information on selecting the perfect ingredients, check out Epicurious.

Yield:
4 Servings

Ingredients

1.5 lbs ribeye or strip loin steak

2-3 large potatoes, peeled and sliced into 1/2-inch thick rounds

4 cloves of garlic, minced

1/2 cup unsalted butter, softened

1/4 cup chopped fresh parsley

2 lemons, juiced

Salt and pepper, to taste

Directions

1
Preheat your oven to 400°F (200°C). Season the steak with salt and pepper on both sides.

2
Heat a large oven-safe skillet over medium-high heat. Add the steak and sear for 2-3 minutes per side, or until a nice crust forms. Transfer the skillet to the preheated oven and cook for 8-12 minutes, or until the steak reaches your desired level of doneness.

3
While the steak is cooking, prepare the potatoes. Slice them into 1/2-inch thick rounds and place them in a bowl. Drizzle with a little bit of olive oil and sprinkle with salt and pepper. Toss to coat.

4
Remove the steak from the oven and let it rest for 5 minutes. Add the potatoes to the skillet and cook for 10-12 minutes, or until they’re golden brown and crispy.

5
To make the garlic butter, mix the softened butter with minced garlic, chopped parsley, and lemon juice. Serve the steak with the garlic butter spooned over the top and the potatoes on the side.

Storage & Reheating

Leftover steak and potatoes can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply place the steak and potatoes in the oven at 350°F (175°C) for 5-7 minutes, or until warmed through.
