Yield:

Ingredients

1 pound ground meat (beef, pork, or a combination of the two)

1/2 cup grape jelly

1/4 cup breadcrumbs

1 egg

1/4 cup chopped fresh parsley

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup chopped fresh basil

Directions

1
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.

2
In a large bowl, combine the ground meat, grape jelly, breadcrumbs, egg, parsley, salt, and pepper. Mix everything together with your hands or a wooden spoon until just combined. Be careful not to overmix.

3
Use your hands to shape the mixture into small meatballs, about 1 1/2 inches (3.8 cm) in diameter. You should end up with around 20-25 meatballs.

4
Place the meatballs onto the prepared baking sheet, leaving a little space between each one to allow for even cooking. Drizzle with the olive oil and sprinkle with the chopped basil.

5
Bake the meatballs in the preheated oven for 18-20 minutes, or until cooked through and lightly browned on the outside.

Storage & Reheating

Once the meatballs have cooled, you can store them in an airtight container in the fridge for up to 3 days. To reheat, simply place them on a baking sheet and bake in a preheated oven at 350°F (180°C) for 5-7 minutes, or until warmed through. You can also reheat them in a saucepan on the stovetop over low heat, stirring occasionally, until warmed through.
